Skillet Corn On The Cob With Parmesan And Cilantro Recipe

Ingredients

  • 4 x ears fresh corn
  • 6 Tbsp. extra virgin olive oil
  • 1/3 c. freshly-grated Parmesan cheese
  • 1 x garlic clove chopped
  • 1 Tbsp. fresh lime juice
  • 1 tsp grnd cumin
  • 1/2 tsp warm pepper sauce
  • 1/4 c. minced fresh cilantro

Directions

  1. Cook corn in pot of boiling salted water till tender, about 5 min. Drain.
  2. Whisk 5 Tbsp. oil, cheese, garlic, lime juice, cumin, and pepper sauce in medium bowl to blend. Season to taste with salt and pepper.
  3. Heat remaining 1 Tbsp. oil in large skillet over medium-high heat. Add in corn and saute/fry till heated through, turning frequently, about 2 min. Brush corn with some of Parmesan mix. Turn corn and brush with more cheese mix. Cook till coating begins to color, about 3 min.
  4. Transfer corn to platter. Mix cilantro into any remaining Parmesan mix and brush over corn.
  5. This recipe yields 4 servings.
