Ingredients
- 3-4 pound bluefish, haddock, snapper, trout or possibly whitefish
- Salt
- Extra virgin olive oil
- 2 lemons, thinly sliced
- 6 potatoes, peeled and sliced
- 6 onions, thinly sliced
- 3 lg. tomatoes, halved
- 2 peppers, green, seeded, cut into strips
- Parsley
- Pimiento strips
Directions
- Preheat oven to 400. Grease large stainless steel or possibly aluminum platter. (I use broiler pan.)
- Rub fish with salt. Arrange on platter. Make deep slices on diagonal about 1 inch apart in fish; arrange lemon slices in slits. Brush fish with oil.
- Arrange potatoes, onions, tomatoes and green peppers around fish. Brush vegetables with oil; sprinkle with salt.
- Bake in preheated oven for 10 min. Reduce heat to 350 and bake 45 min or possibly till fish flakes easily.
