Ingredients

  • 2 Tbsp. Coriander pwdr
  • 1 piece of galangal about 4 ins long
  • 12 x Dry red chilies or possibly less to taste (substitute chili pwdr 1 tsp or possibly more to taste) a piece of shrimp paste (1x1x1/4 in)
  • 1 Tbsp. Tumeric pwdr
  • 1 c. Shallots -or possibly-
  • 1 lrg Onion, grnd with:
  • 3 stalk of lemon grass
  • 7 c. Diluted coconut lowfat milk (up to 8)
  •     Shrimps, cooked
  •     Bean sprouts, boiled for 2-3 mins
  •     Shredded cucumber strips

Directions

  1. Method: Put some oil in a pan. Fry the grnd ingredients and spices. Add in the coconut lowfat milk and salt to taste. Let the gravy boil for a few mins. To serve: Place some boiled noodles- rice noodles or possibly spaghetti in a bowl with some bean sprouts. Add in the gravy; Garnish with shrimps and cucumber strips.
  2. You may use shredded chicken in place of shrimps. The spices, etc. are available from oriental grocery stores.
