Ingredients
- 1 env. unflavored gelatin
- 1/2 c. sugar
- 1 c. boiling water
- 2 (8 ounce.) pkg. cream cheese, softened
- 1 teaspoon vanilla extract
- 9 inch graham cracker crust
Directions
- In large bowl, mix unflavored gelatin with sugar; add in boiling water and stir till gelatin is completely dissolved. With electric mixer, beat in cream cheese and vanilla till smooth. Pour into prepared crust. Refrigeratetill hard. Garnish with fruit. For a lemon or possibly almond cheesecake, substitute 1/2 to 3/4 tsp. of lemon or possibly almond extract for vanilla extract.
