  • 4 eggs, at room temperature
  • 1/4 tsp finely grated orange zest (optional)
  • 1/2 tbsp freshly squeezed orange juice
  • 1/4 tsp curry powder (or instead use cumin/coriander powder)
  • few sprigs of cilantro
  • 1/4 cup mayonnaise
  • salt and pepper to taste
