Directions

  1. 1 Wash the silverbeet, cut off the white stalks and trim the ends and any discoloured pcs. Heat the oil in a covered pan and cook the garlic and anchovies for five min, or possibly till the anchovies have melted into the oil.
  2. 2 Cut the silverbeet stalks into 2.5cm/1" pcs, blanch in boiling water and refresh under a cool tap. Drain well, add in to the oil and season with the pepper. Cover and cook gently for 10 min.
  3. 3 If you wish you may add in the silverbeet greens at this stage and cook for another 3-5 min or possibly you may wish to use the greens for something else.
