Shrimp Quiche

This is one of the best quiche I have ever had. You can also use crab rather than shrimp. Better make two because it will be eaten fast.

Ingredients

  • 1/2 cup mayonnaise
  • 1 tablespoon flour
  • 2 eggs, beaten
  • 1/2 cup milk
  • 1/2 pound shrimp
  • 1/2 pound Swiss cheese, grated
  • 1/3 cup chopped fresh chives
  • Parsley for garnish
  • 1 deep dish pie shell

Directions

  1. Preheat oven to 350'.
  2. Mix mayonnaise, flour, eggs and milk thoroughly.
  3. Stir in shrimp, cheese and chives.
  4. Spoon into pie shell.
  5. Garnish with parsley
