Ingredients
- 4 tbsp. extra virgin olive oil
- 1 onion, finely minced
- 2 garlic cloves, chopped
- 1/4 c. minced parsley
- 6 ounce. can tomato paste
- 6 ounce. water
- 1 tbsp. sugar
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon oregano
- 1/2 teaspoon basil
- 1 pound med. shrimp, shelled & cleaned
- 1 pound cooked pasta
Directions
- In a large frying pan, saute/fry chopped garlic, parsley and onion in extra virgin olive oil for 5 min, or possibly till golden. Stir in remaining ingredients except shrimp; simmer for 20 min. Add in shrimp and cook for about 10 min more. Serve over cooked pasta. Serves 4.
