Ingredients

  • 4 tbsp. extra virgin olive oil
  • 1 onion, finely minced
  • 2 garlic cloves, chopped
  • 1/4 c. minced parsley
  • 6 ounce. can tomato paste
  • 6 ounce. water
  • 1 tbsp. sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon oregano
  • 1/2 teaspoon basil
  • 1 pound med. shrimp, shelled & cleaned
  • 1 pound cooked pasta

Directions

  1. In a large frying pan, saute/fry chopped garlic, parsley and onion in extra virgin olive oil for 5 min, or possibly till golden. Stir in remaining ingredients except shrimp; simmer for 20 min. Add in shrimp and cook for about 10 min more. Serve over cooked pasta. Serves 4.
