Ingredients
- 1Â 1/2 c. minced celery
- 1Â 1/2 c. diced potatoes
- 3/4 c. minced onion
- 1Â 1/2 c. water
- 1/2 tsp salt and pepper
- 3 c. lowfat milk, half and half, evaporated lowfat milk or possibly any combination of these
- Â Â (I use mix of half and half and evaporated lowfat milk for a creamier effect)
- 3 Tbsp. flour
- 3/4 lb precooked shrimp
- 3 Tbsp. butter (I always use more)
- 2 can cream of shrimp soup
Directions
- Place celery, potato, onion, salt, pepper and cream of shrimp soup in pot.
- Bring to boil.
- Reduce heat.
- Cover and simmer 15 min till potatoes are tender.
- Blend lowfat milk and flour, stir into potato mix.
- Add in shrimp and butter.
- Simmer, stirring till thickened and bubbly.
- *The cream of shrimp gives it the extra boost of flavor it needs so just use a taste test to see how much you want to add in. The extra butter just makes it even more yummy. If desired more seasoning feel free to add in it while simmering; I do this by precooking my shrimp in some Tony's seasoning.
- This is such an easy and delicious recipe. This is the recipe which I got from a "Fry Daddy" I purchased several years ago but I have changed it up some and I still do each time I cook it. Just keeps getting better!
