Shrimp and Goat Cheese Pinwheels Recipe

I love shrimp and goat cheese and finger food and snacking! Okay I just love to eat. This appetizer recipe combines two of my favorite foods in a nice little pinwheel “package.”

  • 1/2 cup (4 ounces) goat cheese, plain softened at room temperature
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon parsley
  • 10 medium shrimp, boiled, peeled and deveined
  • 2 (6 inch) flour tortilla shells

Directions

  1. In a bowl combine the goat cheese, garlic and parsley. Cream together. Divide the mixture evenly between the flour tortillas. Spread out so that tortilla is covered to the edges. Place the shrimp along one edge in a line. Roll the tortilla from this edge into a roll. Wrap in a piece of plastic wrap and place in the fridge for 30 minutes before cutting to serve. Slice in approximately 3/4 inch slices and enjoy! Makes 16 slices.
