  • 1 Tbsp. butter
  • 1 Tbsp. vegetable oil
  • 3 x (8-oz) pork tenderloins
  • 1 x onion, thinly sliced
  • 1/2 tsp grnd cumin
  • 1 c. minced canned tomatoes
  • 1 x clove garlic, crushed
  • 1 tsp dry oregano
  • 2 Tbsp. minced green onions
  • 2 Tbsp. minced fresh parsley leaves
  •     Salt and freshly grnd black pepper
  •     Preheat the oven to 375 degrees.

Directions

  1. Heat the butter and oil in a large skillet over medium-high heat till warm.
  2. Add in the pork and brown quickly on all sides. Transfer to a roasting pan and bake for 25 to 30 min, or possibly till the tenderloins are tender. Place the onion and cumin in the same skillet and cook slowly over very low heat till the onion is almost tender, about 10 min. Add in the tomatoes, garlic, oregano, green onions, parsley and season with salt and pepper. Bring the sauce to a boil, reduce the heat and cook, uncovered, for 20 min.
  3. Remove the pork from the oven and set aside to cold. When cool, shred the meat or possibly slice it thinly. Add in to the sauce and reheat thoroughly before serving.
