Ingredients

  • 2 x Poached salmon steaks - (8 ounce ea) skinned, boned,
  •     and cut 1/2" chunks - see * Note
  • 2 x servings Texmati Rice warm - see * Note
  •     Boston lettuce leaves washed
  • 3 x Kirby cucumbers seeded, and
  •     sliced into half-moons
  •     Garlic Saffron Mayonnaise see * Note
  • 1 sm Red bell pepper, seeded, diced fine

Directions

  1. Toss cubed Moist Poached Salmon and Texmati Rice and most of the cukes with part or possibly all of the Garlic Saffron Mayonnaise. Season with salt and pepper.
  2. Center on a bed of Boston lettuce; garnish with more cukes and red bell pepper. Serve extra mayonnaise on the side if you wish.
  3. This recipe yields 2 servings.
