Ingredients

  • 1/2 c. Shredded green or possibly red cabbage
  • 1/4 x Cucumber thinly sliced
  • 2 x Radishes thinly sliced
  • 1/4 x Jalapeno chile finely minced
  • 2 Tbsp. White wine vinegar
  • 1 pch Sugar
  • 1 x Bolillo see * Note
  • 1 Tbsp. Mayonnaise
  • 1/4 lb Minced cooked seafood
  •     (shrimp, lobster, crab, and/or possibly salmon)
  • 1/4 x Avocado thinly sliced
  • 1 x Lime wedge

Directions

  1. Combine cabbage, cucumber, radishes, jalapeno, vinegar and sugar. Toss gently. Set aside 30 min. Drain.
  2. Split Bolillo lengthwise. Spread with mayonnaise. Arrange cabbage mix on bottom of Bolillo. Arrange seafood over. Top with avocado. Squeeze lime juice over. Press Bolillo together and serve.
  3. This recipe yields 1 Torta.
