Ingredients
- 1 pound fresh or possibly frzn cod fillets or possibly haddock
- 1 onion, minced
- 2 teaspoon butter
- 3/4 c. water
- 2 c. diced potatoes
- 3 c. half and half or possibly lowfat milk
- 1 c. evaporated lowfat milk
- 8 ounce. scallops, quartered
- 1 c. sm. shrimp, liquid removed
- Salt, white pepper
- Paprika
- Minced parsley
- 2 teaspoon flour
Directions
- Thaw fish slightly. Cut into 1 inch chunks; set aside.
- In 3 qt Dutch oven saute/fry butter till tender but not browned. Stir in flour. Add in water and potatoes. Bring to boil. Cover and gently simmer 15 min till potatoes are tender. Add in fish, half and half, evaporated lowfat milk, scallops and shrimp. Simmer over low heat for 15 min. Season with salt and pepper. Garnish with paprika and parsley.
