Ingredients

  • 1/2 lb medium-size shell shape pasta cooked al dente,
  •     cool shocked, and well liquid removed
  • 2 x scallions, both whites and greens minced
  • 1/2 sm red bell pepper seeded, and
  •     minced into fine dice
  • 1/3 c. tiny frzn green peas
  •     (a generous handful)
  • 1/4 c. mayonnaise - (to 1/3)
  • 2 Tbsp. minced fresh tarragon
  •     (abt 3 to 4 sprigs)
  •     Coarse salt to taste
  •     Freshly-grnd black pepper to taste
  •     Minced fresh parsley for garnish
  •     Romaine or possibly leaf lettuce for lining plate
  •     under salad

Directions

  1. Pile salad ingredients in a mixing bowl as you prepare them. Combine salad ingredients, taste, and adjust seasonings. Serve salad on bed of lettuce leaves.
  2. This recipe yields 4 servings.
