,%20anything%20mauve,%20jelly%20shoes,%20Madonna%20bracelets,%20feathered%20bangs,%20Duran%20Duran%20(the%20shy%20Roger%20Taylor%20was%20my%20favorite)%E2%80%A6The%2080s%20was%20not%20one%20of%20my%20prouder%20decades.%20Whether%20dancing%20on%20the%20ceiling%20with%20Lionel%20Richie%20or%20blasting%20A-ha%E2%80%99s%20Take%20on%20Me%20on%20my%20Walkman,%20I%20was%20convinced%20that%20being%20like%20everyone%20else%20was%20where%20it%20was%20at.%20Now,%20with%20many%20more%20years%20of%20life%20experience%20under%20my%20belt,%20I%20have%20gained%20enough%20wisdom%20to%20realize%20that%20individuality%20makes%20the%20world%20a%20much%20more%20interesting%20place.%20Despite%20this%20realization,%20I%20am%20happy%20to%20report%20that%20I%20have%20fallen%20headlong%20into%20the%20tantalizing%20trend%20of%20combing%20caramel%20and%20sea%20salt.%20After%20tasting%20my%20Pine%20Nut,%20Caramel,%20and%20Sea%20Salt%20Shortbread%20Bars,%20I%20was%20determined%20to%20delve%20further%20into%20the%20world%20of%20sweet%20and%20salt.%20And%20%E2%80%93%20oh%20%E2%80%93%20what%20a%20happy%20world%20it%20is.%20This%20recipe%20is%20directly%20from%20The%20Kitchn%20and%20it%20is%20foolproof.%20I%20like%20my%20caramels%20rather%20soft,%20but%20if%20you%20prefer%20a%20chewier%20caramel,%20just%20cook%20the%20mixture%20a%20little%20longer%20and%20at%20a%20slightly%20higher%20temperature.%3C/p%3E%3Cp%3ELine%20the%20bottom%20and%20sides%20of%20an%208-%20x%208-inch%20baking%20pan%20with%20parchment%20paper.%20Brush%20lightly%20with%20canola%20oil.%3C/p%3E%3Cp%3EIn%20a%20small%20saucepan,%20combine%201%20cup%20heavy%20cream,%205%20tablespoons%20unsalted%20butter%20(cut%20into%20small%20pieces),%20and%202%20teaspoons%20sea%20salt.%3C/p%3E%3Cp%3EBring%20the%20mixture%20to%20a%20boil,%20stirring%20occasionally.%20Remove%20from%20the%20heat%20and%20set%20aside.%3C/p%3E%3Cp%3EIn%20a%20large,%20heavy%20saucepan%20set%20over%20medium%20to%20medium-high%20heat,%20combine%201%201/2%20cups%20granulated%20sugar,%201/4%20cup%20light%20corn%20syrup,%20and%201/4%20cup%20water.%20Bring%20the%20mixture%20to%20a%20boil,%20stirring.%20Once%20the%20sugar%20is%20dissolved,%20cook%20the%20mixture%20until%20the%20temperature%20reaches%20248%20degrees%20F,%20gently%20swirling%20the%20saucepan%20(do%20not%20stir).%3C/p%3E%3Cp%3ECarefully%20stir%20in%20the%20cream%20mixture.%20It%20will%20bubble%20up,%20so%20take%20care%20not%20to%20burn%20yourself.%3C/p%3E%3Cp%3EContinue%20to%20simmer,%20swirling%20the%20mixture%20frequently,%20for%2015-25%20minutes,%20or%20until%20the%20mixture%20thickens%20and%20turns%20golden%20brown.%20While%20simmering,%20do%20not%20allow%20the%20temperature%20go%20higher%20than%20250%20degrees%20F.%3C/p%3E%3Cp%3EThe%20original%20authors%20offered%20a%20very%20helpful%20candy-making%20tip:%20To%20determine%20if%20the%20caramel%20is%20the%20consistency%20you%20like,%20drop%20a%20small%20amount%20of%20caramel%20into%20a%20bowl%20of%20cold%20water.%20Test%20the%20ball%20of%20caramel%20with%20your%20fingers%20to%20determine%20if%20the%20consistency%20is%20right.%3C/p%3E%3Cp%3EPour%20the%20cooked%20caramel%20into%20the%20prepared%20pan.%20Let%20the%20caramel%20cool%20for%202%20hours.%3C/p%3E%3Cp%3EWhile%20the%20caramel%20is%20still%20slightly%20warm%20press%20some%20grains%20of%20sea%20salt%20into%20the%20surface.%20Cut%20into%201-inch%20pieces%20and%20wrap%20each%20into%20squares%20of%20wax%20paper.%3C/p%3E%3Cp%3ELine%20the%20bottom%20and%20sides%20of%20an%208-%20x%208-inch%20baking%20pan%20with%20parchment%20paper.%20Brush%20lightly%20with%20canola%20oil.%3C/p%3E%3Cp%3EIn%20a%20small%20saucepan,%20combine%20heavy%20cream,%20butter,%20and%202%20teaspoons%20sea%20salt.%20Bring%20the%20mixture%20to%20a%20boil,%20stirring%20occasionally.%20Remove%20from%20the%20heat%20and%20set%20aside.%3C/p%3E%3Cp%3EIn%20a%20large,%20heavy%20saucepan%20set%20over%20medium%20to%20medium-high%20heat,%20combine%20sugar,%20corn%20syrup,%20and%20water.%20Bring%20the%20mixture%20to%20a%20boil,%20stirring.%20Once%20the%20sugar%20is%20dissolved,%20cook%20the%20mixture%20until%20the%20temperature%20reaches%20248%20degrees%20F,%20gently%20swirling%20the%20saucepan%20(do%20not%20stir).%20Carefully%20stir%20in%20the%20cream%20mixture.%20It%20will%20bubble%20up,%20so%20take%20care%20not%20to%20burn%20yourself.%20Continue%20to%20simmer,%20swirling%20the%20mixture%20frequently,%20for%2015-25%20minutes,%20or%20until%20the%20mixture%20thickens%20and%20turns%20golden%20brown.%20While%20simmering,%20do%20not%20allow%20the%20temperature%20go%20higher%20than%20250%20degrees%20F.%3C/p%3E%3Cp%3EThe%20original%20authors%20offered%20a%20very%20helpful%20candy-making%20tip:%20To%20determine%20if%20the%20caramel%20is%20the%20consistency%20you%20like,%20drop%20a%20small%20amount%20of%20caramel%20into%20a%20bowl%20of%20cold%20water.%20Test%20the%20ball%20of%20caramel%20with%20your%20fingers%20to%20determine%20if%20the%20consistency%20is%20right.%3C/p%3E%3Cp%3EPour%20the%20cooked%20caramel
