Ingredients
- 2 pounds of medium ground pork
- 2 cups of white breadcrumbs
- 1 tsp Sage
- 1 Tsp Mace
- Touch of cayenne T.T.
- 1 dozen large eggs
- 1 egg [for egg wash]
Directions
- Mix first five ingredients together until fully incorporated, form into ball and refrigerate.
- Hard-Boil the eggs and allow to cool, then shell.
- Take a small quantity of the meat and form a small circle in your hand, place an egg into it and form meat around it until it is seam free, normally about 1/4 inch thick.
- Mix remaining egg in bowl and place breadcrumbs in similar bowl, coat eggs with egg wash and roll in breadcrumbs.
- Place all of the eggs on baking tray and place in pre-heated oven [300 deg] for about 15 min, turning frequently to avoid burning on the bottom.
- Pre-heat deep fat fryer to 350 deg and lower 3 eggs at a time into oil and fry until golden brown all over, rolling them frequently, remove and drain on paper towel then refrigerate until needed.
