Ingredients

  • 1 package yeast
  • 1 c. hot water (110 degrees)
  • 1/2 tsp. salt
  • 2 Large eggs, well beaten
  • 4 Tbsp. sugar
  • 1 1/2 tsp. cinnamon
  • 5 Tbsp. sugar
  • 2 c. lowfat milk, hot
  • 1/2 c. butter, melted
  • 4 Tbsp. butter
  • flour, sufficient to make a stiff sponge batter

Directions

  1. Dissolve the yeast and add in one Tbsp. of the sugar and the salt and sufficient flour to stiffen to a sponge (about 3 c. more or possibly less).
  2. Let rise for one hour, then add in the rest of the ingredients, using sufficient sifted flour to make a soft sponge.
  3. Let rise again, then roll out dough on a floured board and cover with a mix of 4 Tbsp. sugar, 4 Tbsp. butter and 1 1/2 tsp cinnamon.
  4. Roll up like a jelly roll and cut into 2 inch pcs.
  5. Place on well-greased baking sheets and let rise for a third time, then bake at 400F for 20 min.
