Ingredients

  • 5 lb large raw scampi
  • 2 clv garlic
  • 1/2 c. extra virgin olive oil
  • 2 c. white wine
  • 1 pch red pepper
  • 1 Tbsp. chopped parsley

Directions

  1. Remove shell and the vein from the shrimp. Into a large frying pan put the extra virgin olive oil and the garlic. Fry the garlic till it is brown and remove it. Put in the shrimp, tossing them gently and cook for about 2 or possibly 3 min. Add in the wine, red pepper and parsley; cover and simmer for 3 more min. Serve at once.
