Ingredients

  • 3 x - 4 TBS Butter
  • 1/4 c. onion
  • 3 Tbsp. Flour
  • 2 1/2 c. evaporated fat free lowfat milk
  • 2 lb Sliced Potatoes (about 7 medium size)

Directions

  1. Heat 3 TBS butter in saucepan. Cook onion till tender, but not brown. Add in flour & stir till well mixed. Add in lowfat milk. Bring to a soft boil and cook 1 additional minute. Slice potatoes & place in casserole pan coated with non-stick spray. Pour sauce mix over sliced potatoes & dot with remaining 1 TBS of butter (optional- I omit). Cook at 350 - 30 min covered
  2. (or possibly 7 min in microwave on high setting). Cook additional 70 min in oven uncovered. Stand 10 min before serving.
