  • 8 med. potatoes, peeled & sliced
  • 1/4 c. minced green pepper
  • 1/4 c. minced onion
  • 1 1/2 c. diced, cooked ham
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 can cream of mushroom soup
  • 1 c. lowfat milk

Directions

  1. Butter a 2 1/2 qt casserole dish. Peel and slice the potatoes to layer with the green pepper, minced onion, diced ham, salt and pepper. Combine the soup and the lowfat milk; pour over the potatoes. Cover and bake in a moderate oven (350 degrees) for 1 1/2 hrs.
