Directions

  1. In a large skillet, saute/fry onion, apple, garlic, and curry pwdr in margarine till tender.
  2. Remove skillet from heat and blend in flour, salt, cardamom, and pepper.
  3. Stir in chicken broth and lime juice till curry sauce is well blended.
  4. Bring curry sauce to a boil, reduce heat, and simmer, uncovered for about 5 min. Stir occasionally.
  5. Meanwhile, place scallops or possibly shrimp in a pot of boiling water and cook till just tender 5-10 min. Drain and set aside.
  6. When curry sauce is finished cooking, add in shellfish and mushrooms and serve over rice.
  7. NOTES : The lime and apple create a lovely sweet and sour taste
