Diablo or deviled usually means spicy, often hot and always full of rich, complex flavors.

These, of course, have been toned down for my wimpy palate. Add your own favorite hot sauce to taste.

I cut my own ‘thick-cut chops’ off of a whole pork loin and they’re very tender. I only used two chops for us.

Depending on the type and thickness of chops you may need to increase the braising time.

Savory Pork Chops Diablo

Total time: 30 minutes

Ingredients:

Instructions:

Combine flour and 1 tbs chili powder in plastic food bag.

Add pork chops and toss to coat.

In nonstick skillet, large enough to hold the chops in one layer, heat 2 tsp oil over medium-high heat.

Add chops and sauté about 3 minutes per side, until lightly browned.

Remove and set aside.

Add remaining 2 tsp oil and the remaining 1 tbs chili powder.

Sauté for 1 minute, then add onions.

Sauté about 5 minutes until onion starts to brown.

Add tomato sauce, broth, Worcestershire, mustard and bring to a boil.

Add cornstarch mixture and cook, stirring constantly until thickened.

Reduce heat to low and return chops to pan.

Cover, and simmer chops until done, about 10 minutes, turning once.

Serve chops with sauce and onions.

I can’t decide if I should be angry that supposedly random people with cameras are completely insensitive to the plight of the subjects of their videos or amused that, apparently, they think I (and the rest of the world) don’t realize it’s staged.

Or is it staged?

Or are they insensitive idiots?

My problem is I don’t know – and, frankly, can’t be bothered to find out so I’m not watching any more videos on Facebook.

Even if you say: “OMG!!!! When you see what happens at 1 minute you’ll cry!!”

Well, for the record, I have never looked at any with that much hype, but I have succumbed to others that have been shared by people I recognize.

It’s perfectly appropriate and believable that the photographer filming the baby bear being stalked by the cougar was not in a position to intervene. And mama bear came to the rescue for those of you who haven’t seen it on one of the numerous occasions it’s made the circuit.

But the person filming a child falling through the ice? And continuing to film?

That was either staged or the person with the camera should be arrested and jailed for not dropping the camera and running to save the child…. Not applauded for a great video.

Today I saw a real tear-jerker, complete with running commentary, imploring us, as humans, to be kind. It was of a homeless boy in New York, freezing temperature (5F, -15C), with no jacket, begging on the streets. The person with the camera recorded the boy, shaking and huddling in a garbage bag, for 2 hours. Another homeless person finally came along and gave the boy his own jacket. He’s lauded as a hero.

What about the idiot with the camera who did nothing for two entire hours but watch a kid freeze? I’m fairly certain it was a human and not a security camera as the angle changed frequently and it zoomed in and out.

If that was real it makes me angry on behalf of the homeless boy and homeless man who helped him and ashamed of the person who was so insensitive as to record it rather than help.

If it was staged – fine, but admit it…. And don’t get all preachy about it.

There are groups who do social experiments and video the results, but they always state up front what they are doing and why. No one is endangered or harmed or (unduly) embarrassed.

Obviously as long as people click on and watch these cruel / fake videos they’ll continue to be made and continue to blur the lines of veracity.

Starting now I’m doing my infinitely small part to stop the madness.

I refuse to click.

OMG!!!!! Did I just make a New Year’s Resolution????? Someone, quick, grab a camera!?!?!?!?!

(That ought to handle punctuation overload for the year as well.)
