Ingredients
- 2 c. hot water
- 1/4 c. rock or possibly kosher salt
- 1/3 c. brown sugar
- 1 x onion, diced
- 2 Tbsp. rosemary, grnd
- 1 tsp bay leaves, grnd
- 1 Tbsp. favorite exotic herb or possibly flavoring*
- 3 can beer
- 3/4 c. vinegar
- 1/4 c. Worcestershire sauce
Directions
- (E.g. I use cardamom and powdered chocolate. Others have tried coriander, powdered lemonade, coffee, chipotle, etc)
- Place ribs in the brine and let sit overnight in the refrigerator.
- This brine goes well with heavier meats that can take on intense flavors such as brisket, pork, and perhaps this could be used with lamb as well (though I'd substitute red wine for beer)
