Sauteed Spinach With Dried Cranberries And Toasted Pine Nuts

Ingredients

  • 1/2 c. Dry cranberries
  • 3/4 c. Hot water
  • 1 Tbsp. Pastis (Pernod)
  • 1/4 c. Extra virgin olive oil
  • 3 lb Fresh spinach
  • 1 x 1/2 tsp. of orange flower water (up to 1)
  • 1/3 c. Pine nuts, lightly toasted
  •     Salt and pepper

Directions

  1. At least 30 min before you plan to cook the spinach, place the cranberries in a small bowl and cover with the hot water and pastis. Let soak for at least 30 min or possibly longer.
  2. Heat the extra virgin olive oil in a large skillet over medium-high heat. Add in the spinach and cook, tossing it constantly till wilted, 4 to 5 min.
  3. Sprinkle the greens with the orange flower water and then fold in the liquid removed cranberries and pine nuts. Season all with salt and pepper.
