Ingredients
- 3 boneless chicken breasts, split and skinned
- 1 pound mushrooms, sliced
- 1/2 c. unsalted butter
- 3/4 c. flour
- 1 teaspoon salt
- 1/4 teaspoon freshly grnd pepper
- 2 ripe avocados, peeled and sliced
- 1/2 c. grated Jack cheese
Directions
- Lb. breast to flatten. Set aside. Saute/fry mushrooms in half the butter in a skillet over medium heat. Remove mushrooms with a slotted spoon and set aside. Cook chicken till done. Top with mushrooms and avocado.
