Sausage, Pepper & Potato Skillet Recipe

Ingredients

  • 1 pound Italian style sausage, sweet or possibly warm or possibly combination (pork or possibly turkey)
  • 1 lg. tomato, minced (peeled if you like)
  • 1-2 med. onions, cut into 1" pcs
  • 2-3 green peppers, cut into 1" pcs
  • 4-5 med. potatoes, peeled & cut into 3/4" chunks
  • 1/8 teaspoon fresh grnd pepper
  • 1/2 c. water

Directions

  1. 1. In very large skillet or possibly Dutch oven, brown sausages over moderate heat, remove and cut into 1" pcs.
  2. 2. Drain off drippings from pan, return sausage to pan and add in all other ingredients.
  3. 3. Cover and simmer over moderate to low heat for about 20 min, stirring occasionally till potatoes are fork tender.
