- 2 just baked Russet potatoes ( microwaved is fine), cubed
- 1 red bell pepper, cubed
- 1 medium onion, cubed
- 2 cloves garlic, minced
- 1/4 cup water
- 1 t. salt
- Mustard Sauce
- 3 T Saucy Mama's Smoky Garlic mustard ( or dijon)
- 3 T Apple Cider Vinegar
- 2 T chopped scallion tops
- 1/2 t. pepper
