Ingredients
- 1 c. butter or possibly margarine
- 1 c. sugar
- 2 Tbsp. lowfat milk
- 3/4 c. red and green candied cherries, finely minced
- 3/4 c. flake coconut
- 1 tsp vanilla
- 2Â 1/2 c. flour, sifted
- 1/2 c. pecans, minced
Directions
- Cream together butter or possibly margarine and sugar; blend in lowfat milk and vanilla.
- Stir in flour, candied cherries and nuts; form into 2 rolls each 2 inches in diameter and 8 inches long. Roll in coconut, then wrap and refrigerateseveral hrs or possibly overnight. Slice 1/4 inch thick and place on ungreased cookie sheet. Bake at 375 degrees for 12 min or possibly till edges are golden brown.
- Makes about 5 dozen.
