Salty, sweet and boozy, Salted Maple Bourbon Marshmallows are perfect for hot chocolate, coffee or even eating out of hand.
Happy Holidays! I hope everyone who celebrates had a wonderful Christmas.
We are still flitting from house to house and family to family, but I wanted to share these marshmallows with you so that you could make them for New Year’s. They suit the holiday–kind of boozy and decadent. And heck even good finger food for any nighttime bowl games. %205%20t%20gelatin%206%20T%20cold%20water%201%20t%20maple%20extract%20For%20the%20syrup:%201%20cup%20maple%20syrup%20%C2%BE%20cup%20sugar%201%20T%20light%20corn%20syrup%201%C2%BD%20t%20kosher%20sea%20salt%20For%20the%20fluff:%20Additional%201%20t%20maple%20extract%20For%20the%20coating:%20%C2%BD%20cup%20powdered%20sugar%20%C2%BD%20cup%20potato%20or%20corn%20starch%20%20%20Instructions%3C/p%3E%3Cp%3ELightly%20spray%20an%208X8%20or%209X9%20nonstick%20pan%20with%20oil%20spray.%20Set%20aside.%20In%20the%20bottom%20of%20your%20mixer%20bowl,%20whisk%20together%20the%20gelatin,%20maple%20bourbon,%20water%20and%201%20teaspoon%20maple%20extract.%20Place%20back%20in%20the%20mixer%20and%20attach%20the%20whip.%20Leave%20to%20set%20while%20you%20prepare%20the%20syrup.%20Stir%20together%20the%20sugar,%20maple%20syrup,%20corn%20syrup%20and%20salt%20in%20a%20heavy,%20medium-large,%20non-reactive%20sauce%20pan%20(I%20used%20a%202%20qt%20All%20Clad).%20Place%20over%20high%20heat%20with%20a%20candy%20thermometer%20attached%20to%20the%20side%20of%20the%20pan%20and%20submerged%20in%20the%20syrup.%20Do%20not%20stir%20again.%20Boil%20until%20the%20thermometer%20reads%20248%20F.%20When%20it%20reaches%20248%20F,%20slowly%20pour%20it%20into%20the%20mixer%20bowl%20with%20the%20whisk%20attachment%20running%20on%20low%20speed.%20I%20like%20to%20rest%20the%20pot%20on%20the%20side%20of%20the%20metal%20bowl%20and%20let%20it%20slowly%20drizzle%20down%20the%20sides%20of%20the%20bowl.%20Be%20very%20careful%20because%20the%20syrup%20is%20hot%20and%20sugar%20burns%20are%20particularly%20bad.%20Increase%20the%20speed%20to%20medium%20and%20beat%20for%205%20minutes.%20Be%20wary%20of%20splattering.%20Increase%20to%20medium%20high%20speed%20and%20beat%20an%20additional%203%20minutes.%20Reduce%20the%20speed%20to%20add%20additional%201%20teaspoon%20maple%20extract%20and%20then%20increase%20to%20the%20highest%20speed.%20If%20the%20weather%20is%20quite%20dry%20beat%20for%202%20more%20minutes.%20If%20it%20is%20average,%20beat%20for%203%20minutes.%20If%20you%20are%20at%20all%20concerned%20about%20damp,%20beat%20for%204%20minutes.%20Take%20a%20good%20sniff%20while%20it%20is%20beating--the%20maple%20should%20be%20prominent.%20If%20it%20is%20not%20strong%20enough%20for%20you%20add%20a%20few%20more%20drops%20of%20maple%20extract.%20While%20the%20fluff%20is%20beating,%20whisk%20together%20the%20corn%20or%20potato%20starch%20and%20powdered%20sugar.%20Set%20aside.%20When%20the%20fluff%20is%20ready,%20quickly%20scrape%20it%20into%20the%20prepared%20pan.%20Using%20a%20silicone%20spatula%20dredged%20in%20the%20powdered%20sugar%20mixture,%20spread%20the%20fluff%20evenly%20into%20the%20pan.%20Sift%20a%20tablespoon%20or%20two%20of%20the%20prepared%20coating%20(powdered%20sugar%20and%20starch)%20over%20the%20fluff%20in%20the%20pan.%20Set%20aside%20for%206%20hours%20(or%20up%20to%20overnight)%20in%20a%20cool,%20dry%20place.%20Reserve%20the%20remaining%20coating%20mix.%20When%20you%20are%20ready%20to%20slice%20the%20marshmallows,%20sift%20some%20of%20the%20coating%20mixture%20over%20a%20cutting%20board.%20Using%20a%20skinny%20silicone%20spatula,%20loosen%20the%20marshmallow%20cake%20from%20the%20sides%20of%20the%20pan.%20Pop%20the%20marshmallow%20cake%20out%20and%20onto%20the%20prepared%20cutting%20board.%20Using%20a%20large%20chef's%20knife%20dredged%20in%20the%20coating%20mixture,%20slice%20the%20marshmallows%20into%20whatever%20sized%20rectangles%20you%20desire.%20Use%20a%20firm%20up%20and%20down%20motion--do%20not%20saw.%20Dredge%20each%20individual%20marshmallow%20thoroughly%20in%20the%20coating%20mixture.%20Store%20in%20single%20layers%20in%20a%20mostly%20sealed%20container%E2%80%93crack%20one%20corner%20to%20allow%20for%20some%20air%20flow.%20Marshmallows%20are%20best%20for%20eating%20out%20of%20hand%20fresh,%20but%20these%20will%20be%20great%20in%20coffee%20or%20hot%20chocolate%20for%20a%20few%20weeks.%20%203.2.2925%3C/p%3E){kind=link}
