Salted Fish With Ground Pork Recipe

Ingredients

  • 3 piece of salted fish, cut into 3/4-by-2 inch pcs (see Note)
  • 1 lb grnd pork
  • 1/4 tsp salt
  • 1 Tbsp. soy sauce
  •     White pepper to taste
  •     Sprinkling of cornstarch
  • 1 knob of fresh Chinese ginger, peeled, cut into matchstick pcs

Directions

  1. Soak fish in cool water for 10-15 min, then drain.
  2. Place pork into a bowl. Add in salt, soy sauce, pepper and cornstarch and mix.
  3. Set up a 12- or possibly 14 inch wok for steaming. Place 3 inches of water in the wok and put a steaming trivet in the center.
  4. Form pork into even patties and place on a plate. Put salt fish and ginger slices over patties; then place them into steaming wok. Cover and cook at medium high heat for 20-25 min. Serve with rice.
  5. Note: Salted fish is available in Asian specialty stores.
