Ingredients

  • Closely adapted from Chocolates and Confections at Home with the Culinary Institute of America, Peter Greweling
  • 1 lb (2 cups) sugar
  • 4 oz (1/2 cup) water
  • 12 oz (1 cup) light corn syrup
  • 4 oz (1 cup) cacao nibs
  • 1 t fine sea salt
  • 1 oz (2 T) unsalted butter, softened
  • 2 t vanilla
  • 1 1/2 t baking soda
  • coarse grey sea salt for sprinkling
