Salsa Ole Meatloaf with Corn & Black Beans Recipe

If you like the southwestern flavorings, you should like this. I’ve added black beans and corn to a meatloaf.

Ingredients

  • 1 1.2 lbs. lean ground beef
  • 1/2 cup salsa or picante sauce (I used Pace Picante)
  • 3/4 cup frozen corn
  • 3/4 cup black beans (drained)
  • 1 egg (lightly beaten)
  • 1 1/4 teaspoons ground cumin
  • 3/4 cup shredded cheese (I used reduced fat 4 cheese Mexican)

Directions

  1. 1) In a bowl, mix all of the ingredients together thoroughly.
  2. 2) Put it into a baking pan, and form it into a loaf.
  3. 3) Bake at 325 degrees F for 1 1/2 hours.
