Ingredients

Directions

  1. Heat 2 TBS of the butter in a large frying pan over medium heat; and saute/fry the onions. Add in spinach to pan, cover, and cook just till wilted. Turn into a shallow 2 qt baking dish. Pour water into pan, add in lemon juice, dash of salt and pepper, and salmon. Cover and simmer till fish flakes when probed, about 10 min. Lift out fish and arrange on spinach.
  2. Reserve 1 c. poaching liquid. Heat remaining 2 TBS butter in pan; stir in flour and cook till bubbly. Add in the reserved poaching liquid and cook, stirring, till thinkened. Season with salt, pepper, mustard, and cheese.
  3. Pour over fish. Bake uncovered, in a 350 oven 20 min or possibly till warm.
  4. Serves 4
