  • 1 lrg shallot
  • 1 c. water
  • 3 Tbsp. soy sauce
  • 4 x center-cut 3"-wide salmon fillets - (abt 1 2/3 lbs)
  • 1/3 c. mayonnaise
  • 3 Tbsp. wasabi sauce with ginger
  •     (such as Gold's)
  •     Flat-leaf parsley sprigs for garnish if you like

Directions

  1. Heat oven to 325 degrees. Finely chop sufficient of the shallot to equal 1 tsp. and slice the rest. Combine the sliced shallot, water and soy sauce in a 9-inch deep-dish pie plate or possibly 2-qt baking dish. Add in fillets skin-side up. Bake 15 min. (For a completely opaque fish, increase the cooking time to 18 min.)
  2. Meanwhile, whisk mayonnaise with wasabi sauce.
  3. Remove fish from oven and let stand 3 to 5 min. Measure 2 Tbsp. of the cooking liquid and whisk into mayonnaise mix. Peel skin from fish. Turn right side up on plates and drizzle dressing over fish. Garnish with parsley sprigs, if you like.
  4. This recipe yields 4 servings.
  5. Description: "Poaching in a slow oven is the best way to produce proportionately cooked fish. The cooking time given in this recipe yields a slightly rosy center."
