Ingredients
- 1 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 8 tablespoons cold unsalted butter
- 5 tablespoons ice cold water
- For the tart:
- 3 large baking apples (Fuji, Rome Beauty, and Granny Smith), peeled, cored and thinly sliced
- 1 tablespoon plus 1/2 cup granulated sugar
- 1 tablespoon all purpose flour
- ½ teaspoon ground cinnamon
- Pinch of ground allspice
- Pinch of ground ginger
- Pinch of salt
- 1 cup white wine
- 3 whole cloves
- 1/2 cup water
- 1 egg, lightly beaten with a little water or milk
- Raw or granulated sugar for sprinkling

%20that%20mastering%20pie%20dough%20(along%20with%20knowing%20how%20to%20roast%20a%20chicken)%20is%20one%20of%20the%20culinary%20skills%20that%20everyone%20should%20know.%20%20Seriously.%20How%20deliciously%20wonderful%20would%20this%20world%20be%20if%20everyone%20knew%20how%20to%20make%20pie%20dough?%3C/p%3E%3Cp%3EI%20know%20the%20thought%20of%20making%20pastry%20dough%20makes%20you%20break%20out%20in%20hives,%20but%20give%20it%20a%20whirl,%20and%20maybe%20another%20whirl,%20and%20perhaps%20one%20more.%20But%20that%E2%80%99s%20it.%20Because%20I%E2%80%99m%20pretty%20sure%20that%20by%20the%20third%20try%20you%E2%80%99ll%20have%20it%20mastered%20and%20you%E2%80%99ll%20be%20rightly%20proud%20and%20everyone%20who%20eats%20your%20homemade%20pastry%20dough%20will%20worship%20at%20your%20feet.%20%20Mastering%20pastry%20dough%20is%20a%20powerful,%20powerful%20thing%20%E2%80%93%20it%E2%80%99s%20like%20dark%20magic,%20but%20for%20good.%3C/p%3E%3Cp%3ESpeaking%20of%20magic,%20the%20white%20wine%20syrup%20is%20a%20must%20and%20packs%20surprising%20flavor%20for%20consisting%20of%20nothing%20more%20than%20white%20wine,%20sugar,%20water,%20and%20cloves.%20%20It%E2%80%99s%20mandatory%20to%20serve%20with%20the%20pie%20and%20dynamite%20when%20you%20add%20a%20scoop%20of%20vanilla%20ice%20cream%20to%20the%20mix.%20%20It%E2%80%99s%20also%20very%20easy%20to%20make%20so%20no%20excuses.%3C/p%3E%3Cp%3EAs%20for%20the%20apples,%20be%20sure%20to%20select%20baking%20apples%20and%20use%20more%20than%20one%20variety.%20%20%20I%20love%20Rome%20Beauty,%20Fuji,%20and%20Granny%20Smith%20when%20baking,%20but%20experiment%20with%20your%20favorite%20baking%20apples%20to%20find%20a%20combination%20that%20works%20for%20you.%20%20Happy%20cooking!%3C/p%3E%3Cp%3EServes%206%3C/p%3E%3Cp%3EFor%20the%20pastry%20dough:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20400%20degrees%20and%20line%20a%20baking%20sheet%20with%20parchment%20paper.%20In%20a%20large%20bowl,%20whisk%20together%20the%20flour%20and%20salt.%20Cut%20the%208%20tablespoons%20of%20butter%20into%20small%20cubes.%20Use%20two%20forks%20or%20a%20pastry%20blender%20to%20cut%20the%20cold%20butter%20into%20the%20flour%20mixture%20until%20the%20fat%20is%20in%20small%20lumps.%20%20%20Sprinkle%20the%20ice-cold%20water%20over%20the%20flour%20mixture%20and%20use%20a%20fork%20to%20pull%20the%20mixture%20together.%20Add%20up%20to%201%20more%20tablespoon%20of%20water,%20in%20teaspoonfuls,%20if%20the%20dough%20is%20not%20coming%20together.%20Turn%20the%20dough%20out%20on%20the%20counter%20and,%20working%20quickly,%20mold%20it%20into%20a%20large%20ball.%20Press%20the%20ball%20into%20a%205-inch%20disc.%20Wrap%20the%20dough%20with%20plastic%20wrap%20and%20refrigerate%20for%20at%20least%20thirty%20minutes%20and%20up%20to%20one%20day.%3C/p%3E%3Cp%3EWhile%20the%20dough%20is%20resting,%20toss%20the%20apple%20slices%20with%201%20tablespoon%20of%20sugar,%20the%20flour,%20cinnamon,%20allspice,%20ginger%20and%20salt%20in%20a%20large%20bowl.%20Set%20aside.%3C/p%3E%3Cp%3EBring%20the%20remaining%201/2-cup%20sugar,%20the%20white%20wine,%20cloves,%20and%20water%20to%20a%20boil%20in%20a%20small%20saucepan.%20Stir%20constantly%20until%20the%20sugar%20dissolves.%20Stop%20stirring%20and%20let%20the%20mixture%20boil%20until%20it%20is%20reduced%20to%201/2%20cup.%20Remove%20the%20saucepan%20from%20the%20heat,%20remove%20and%20discard%20the%20cloves,%20and%20set%20aside.%3C/p%3E%3Cp%3EOn%20a%20well-floured%20surface,%20roll%20out%20the%20dough%20to%20a%20large%201/4-inch%20thick%20circle.%20Use%20the%20rolling%20pin%20to%20transfer%20the%20dough%20from%20the%20countertop%20to%20a%20parchment-lined%20baking%20sheet.%20Spoon%20the%20apple%20slices%20into%20the%20middle%20of%20the%20pastry%20dough%20leaving%20a%201-1/2%20inch%20border.%20Fold%20the%20pastry%20dough%20up%20around%20the%20apples,%20until%20the%20apples%20are%20contained%20and%20the%20edges%20covered%20by%20about%201-inch%20of%20the%20pastry%20dough.%20You%20will%20need%20to%20pleat%20the%20edge%20to%20make%20it%20all%20the%20way%20around.%20Brush%20the%20exposed%20dough%20with%20the%20egg%20wash%20and%20sprinkle%20it%20with%20sugar.%3C/p%3E%3Cp%3EBake%20the%20tart%20for%20twenty%20minutes.%20Remove%20it%20from%20the%20oven%20and%20pour%201/2%20of%20the%20wine%20syrup%20over%20the%20tart.%20Bake%20the%20tart%20for%20another%2020%20minutes.%20Serve%20the%20tart%20warm%20or%20at%20room%20temperature%20with%20vanilla%20ice%20cream%20drizzled%20with%20the%20remaining%20syrup.%3C/p%3E%3Cp%3ECook%E2%80%99s%20note:%3C/p%3E%3Cp%3EThe%20wine%20syrup%20will%20thicken%20as%20it%20cools.%20If%20the%20syrup%20is%20too%20thick,%20simply%20reheat%20the%20syrup%20and%20whisk%20in%20a%20little%20water.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
