%20I%20make%20a%20Tuscan%20corn%20meal%20flour%20cake%20from%20a%20recipe%20I%20got%20from%20Bon%20Appetite%20years%20ago.%20It's%20a%20very%20simple%20and%20not%20too%20sweet%20cake%20which%20as%20it%20cools%20I%20baste%20with%20a%20rosemary%20syrup%20%20infusion.%20The%20cake%20is%20then%20served%20with%20a%20dash%20of%20the%20rosemary%20sauce%20and%20topped%20with%20fresh%20blackberries%20and%20unsweetened%20whipped%20cream.%20Simple%20fresh%20delicious.%3C/p%3E%3Cp%3EOk,%20so%20there%20aren't%20any%20fresh%20blackberries%20to%20be%20had%20now.%20The%20rosemary%20is%20ok%20but%20I%20was%20thinking%20of%20trying%20something%20different.%3C/p%3E%3Cp%3EBlood%20oranges%20are%20all%20over%20our%20local%20markets%20so%20I%20thought..hmmm%20.%20What%20%20would%20happen%20if%20I%20made%20a%20blood%20orange%20infusion?%20What%20goes%20with%20oranges%20and%20looks%20like%20blackberries?%20Olives%20of%20course!%20It's%20olive%20season%20here%20in%20Sonoma.%20What%20would%20happen%20if%20I%20candied%20some%20olives??%20I%20had%20to%20try%20it.%20So%20I%20did.%3C/p%3E%3Cp%3EThe%20cake%20is%20a%20simple%20recipe.%3C/p%3E%3Cp%3EPreheat%20an%20oven%20to%20350%20degrees.%20Grease%20and%20flour%20a%209%20inch%20cake%20pan..or%20you%20may%20try%20what%20I%20did%20which%20is,%20grease%20and%20flour%20small%20ceramic%20ramekins%20for%20individual%20cakes.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%C2%B0F.%20and%20butter%20and%20flour%20an%208-%20by%202-inch%20round%20cake%20pan.%3C/p%3E%3Cp%3E1.)%20In%20a%20bowl%20with%20an%20electric%20mixer%20cream%201%20stick%20of%20%20butter%20and%201%20cup%20of%20sugar.%3C/p%3E%3Cp%3EMix%20it%20until%20it's%20all%20light%20and%20fluffy.%3C/p%3E%3Cp%3EThen%20add%20in%20:%3C/p%3E%3Cp%3EBlend%20it%20all%20togther%20with%20your%20electric%20beater%20set%20on%20low.%20Beat%20it%20for%20about%203%20minutes.%20It%20will%20turn%20a%20nice%20pale%20yellow%20color.%3C/p%3E%3Cp%3E8.)%20Pour%20the%20batter%20into%20whichever%20pans%20you%20decide%20to%20use%20for%20about%20%2040%20minutes,%20or%20until%20a%20toothpick%20comes%20out%20clean.%3C/p%3E%3Cp%3EWhile%20your%20cake%20is%20in%20the%20oven%20make%20your%20blood%20orange%20infusion.%3C/p%3E%3Cp%3EBlood%20Orange%20Infusion:%3C/p%3E%3Cp%3E1.)%20juice%204%20blood%20oranges%3C/p%3E%3Cp%3E2.)%20Add%20about%201%20Tbs%20of%20sugar,%20taste%20and%20check%20you%20don't%20want%20it%20too%20sweet.%3C/p%3E%3Cp%3EBoil%20this%20mixture%20down%20till%20it%20is%20halved.%3C/p%3E%3Cp%3ELet%20it%20cool.%3C/p%3E%3Cp%3EWhen%20the%20cake(s)%20are%20done%20put%20them%20on%20a%20rack%20to%20cool%20in%20their%20pans%20%20or%20little%20cups%20for%20about%2010%20minutes.%3C/p%3E%3Cp%3EAfter%20%2010%20minutes.%20Unmold%20your%20cake%20(s)%20%20and%20set%20it%20bottom%20side%20up%20on%20the%20rack.%3C/p%3E%3Cp%3ENow%20here's%20where%20I%20have%20to%20make%20a%20**Special%20Comment**%3C/p%3E%3Cp%3EWhen%20I've%20baked%20this%20in%20a%20cake%20pan%20I've%20had%20no%20trouble%20unmolding%20my%20cake.%20With%20the%20ramekins%20I%20did.%20They%20didn't%20unmold%20cleanly%20and%20here%20I%20am%20confessing%20it.%20I%20would%20have%20loved%20perfectly%20smooth%20sided%20even%20little%20cakes.%20It's%20not%20what%20I%20got.%20So,%20I%20have%20to%20look%20for%20better%20molds%20for%20these,%20do%20a%20better%20job%20greasing,%20whatever%20.%20Let%20me%20say%20taste%20wise%20they%20were%20perfect,%20eye%20wise..not%20so%20much.%3C/p%3E%3Cp%3EWe%20return%20you%20to%20your%20recipe%20already%20in%20progress.%3C/p%3E%3Cp%3EWhile%20your%20cake%20or%20cakes%20are%20cooling%20you%20take%20your%20Blood%20Orange%20syrup%20and%20baste%20the%20bottom%20(now%20the%20top%20side)%20of%20your%20cake.%20Let%20the%20syrup%20sink%20in,%20then%20keep%20basting.%20Use%20about%201/3%20of%20your%20Blood%20Orange%20syrup%20for%20this.%20Save%20the%20rest%20and%20chill%20it.%3C/p%3E%3Cp%3ENow%20for%20the%20Candied%20Olives!%3C/p%3E%3Cp%3EI'd%20been%20reading%20up%20on%20doing%20this%20to%20olives.%20Candied%20Olives%20have%20all%20ones%20basic%20food%20requirement.%20Sweet,%20Salty%20and%20Fat!!!%20MMMMMMMMmmmmmm.%3C/p%3E%3Cp%3EBut%20I%20digress...%3C/p%3E%3Cp%3ETo%20have%20your%20way%20with%20an%20olive%20start%20with%20some%20Niscoise%20Olives..Kalamata%20will%20also%20do%20just%20fine.%20I%20bought%20tiny%20little%20Niscoise%20olives%20which%20in%20the%20pitting%20and%20dicing%20department%20reminded%20me%20of%20every%20lab%20class%20I%20ever%20took.%20I%20might%20recommend%20larger%20olives%20for%20speeds%20sake.%3C/p%3E%3Cp%3EEither%20way%20get%20some%20olives,%20eyeball%20the%20amount%20that%20seems%20right%20to%20you.%20Pit%20them%20and%20mince%20them.%20Place%20them%20in%20a%20small%20pan%20with%201%20tsp%20of%20sugar%20and%201%20tsp%20of%20blood%20orange%20juice...you%20may%20needc%20to%20add%20more%20juice%20and%20more%20sugar%20if%20you're%20doing%20a%20larger%20number%20of%20olives.%20As%20I%20said%20I%20eyeballed%20it%20and%20it%20turned%20out%20just%20fine.%3C/p%3E%3Cp%3EBring%20the%20olive,%20juice%20and%20sugar%20mixture%20to%20a%20boil%20and%20then%20turn%20it%20all%20out%20onto%20a%20baking%20pan%20and%20place%20it%20in%20a%20200%20degree%20%20pre-heated%20oven%20to%20bake%20for%201%20hour%20or%20more.%20Mine%20took%20close%20to%202%20hours.%20You%20want%20your%20olives%20dried%20and%20slightly%20crispy.%3C/p%3E%3Cp%3ESet%20the%20olives%20aside.%3C/p%3E%3Cp%3ENow,%20for%20the%20presentation.%3C/p%3E%3Cp%3ETake%20the%20basted%20cakes,%20drizzle%20them%20with%20a%20spoonful%20or%20so%20of%20your%20blood%20orange%20infusion,%20scatter%20with%20the%20candied%20olives%20and%20topp%20with%20unsweeted%20whipped%20cream.%20Toss%20a%20couple%20of%20those%20candied%20olives%20on%20top%20of%20that%20too.%3C/p%3E%3Cp%3ENext%20time,%20(%20of%20course%20there%20is%20going%20to%20be%20a%20next%20time%20do%20you%20think%20I'm%20crazy?)%20I%20will%20take%20these%20little%20cakes%20and%20halve%20them%20horizontally%20so%20they%20will%20not%20be%20as%20tall.%20So%20maybe%20different%20molds,%20shorter%20cakes%20%20who%20knows,%20who%20cares?%20%20It%20was%20after%20all,%20delicious.%3C/p%3E%3Cp%3EOf%20course%20we%20were%20being%20observed%20by%20The%20Wolf%20feigning%20indifference,%20hoping%20for%20a%20tab%20of%20whipped%20cream%20on%20her%20nose%20as%20a%20welcome%20home%20present.%3C/p%3E%3Cp%3EDid%20she%20get%20it??%20To%20be%20continued.%3C/p%3E){kind=link}
