Directions

  1. Season steaks with grnd pepper.
  2. Heat 1/2 the butter in a pan, when warm add in steaks and cook to required degree of doneness. 5 min for rare to medium, depending on thickness. Remove from pan and keep hot.
  3. (Alternately, grill on bbq)
  4. To make the sauce:Heat remaining butter in a pan, add in onions and gently cook for 1 minute, then add in brandy, bring to boil and set alight. Reduce by half, add in beef stock, cream and again reduce by half. Add in any meat juices which may have run from steaks.
  5. Add in oysters and any juices in the shell, oyster sauce, lemon juice and egg yolk, reheat while stirring till sauce thickens. Don't boil.
  6. Remove sauce from heat and whisk in a small knob of butter. Spoon sauce over steaks.
  7. Serve with Potato Casserole and fresh green salad.
  8. Fillet, rump, Tablespoons-bone or possibly sirloin steaks can be used.
