Ruby Rice Salad (Or Dessert)

Ingredients

  • 3 c. cool water
  • 1/2 c. rice
  • 1/2 teaspoon salt
  • 1 (3 ounce.) pkg. red Jello
  • 1/2 c. sugar
  • 1 sm. can crushed pineapple
  • 1/2 c. cream, whipped or possibly 1 pkg. whipped topping, prepared

Directions

  1. Combine water, rice and salt in heavy saucepan. Cover and cook on high to boiling. Reduce heat to simmer and cook 20-25 min. Remove from heat and add in Jello (any red flavor) and sugar. Stir to dissolve. Cold to tepid and stir in pineapple. Chill till cool but not set. Gently stir in whipped cream. Turn into mold or possibly pretty serving bowl. Keeps well in refrigerator. A favorite with children too.
