Ingredients

  • Root Beer Whoopie Pies - Adapted from Joni Geurts, Adopted Younger Sister of Yours Truly
  • 1 cup butter
  • 2 cups brown sugar
  • 2 eggs
  • 1 cup buttermilk
  • 1 teaspoon root beer extract or concentrate
  • 4 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • Root Beer Frosting:
  • 4 cups powdered sugar
  • 1 cup butter, softened
  • 3 tablespoons milk
  • 1 1/2 teaspoons vanilla extract or concentrate
  • Root Beer Marshmallow Filling:
  • 1 envelope unflavored gelatin
  • 3/4 cup cold water, divided
  • 1/2 cup sugar
  • 1/4 cup light-colored corn syrup
  • 1/8 teaspoon salt
  • 1 teaspoon Root Beer extract or concentrate
  • If Making Whoopie Pies, prepare the filling: Sprinkle gelatin over 1/2 cup cold water in a
  • large, deep bowl; set aside. Combine remaining 1/4 cup water, 1/2 cup
  • sugar, syrup and 1/8 teaspoon salt in a medium saucepan over medium-high
