Rocky Road Yogurt Parfait Recipe
Vanilla Bean Paste sweetens this Rocky Road Parfait dessert in just the right way.
Rocky Road Yogurt Parfait
- 6 ounces Greek, plain 0% fat yogurt (like Chobani)
- ½ teaspoon Vanilla Bean Paste
- ½ Tablespoon chocolate spread (Like Hershey’s)
- ½ ounce chopped walnuts
- ¼ cup miniature marshmallows
- 1 ounce dark chocolate, roughly chopped
In a medium bowl, combine the vanilla bean paste with the yogurt.
Melt the chocolate spread n the microwave for about 15 seconds.
Add the chocolate to the yogurt and mix thoroughly.
Pour the yogurt into your cup.
Add the nuts, marshmallows and dark chocolate.

I’ve been thinking about all the little things in life that consume our minds. Sometimes we are overwhelmed by so much so quickly that it can be scary. I very rarely just lounge in bed doing nothing. I can’t remember the last time I slept “in”.
But this past Saturday, I did precisely that. I slept “in”. I didn’t get out of bed until 8:30 a.m. for someone who is up at 5:30 a.m. that is sleeping in. but as I rolled out of bed, and padded my way into the kitchen to feed Kona and give her some fresh water, it hit me. Dessert for breakfast. I convinced myself that if I made a yogurt parfait than it’s considered breakfast, right?But when I was done jazzing up this parfait it was clear to me that I was have dessert for breakfast.
I didn’t care. Not one single bit. It was delicious and it paired well with my cup of coffee. Yum.
I figured that since so much time is spent sweating the small stuff, that today it was okay.
