Rocky Road Cheese Cake (No Bake) Recipe
This is another no-bake cheese cake that will make you look like a genius. So simple, but impressive-looking too.

- Preheat oven to 350 degrees
- Combine crumbs, butter and sugar, and press evenly into bottom and about 1/2 inch up the sides of a 9 inch spring form pan. Bake for 10 minutes, remove from oven and set aside.
- Dissolve gelatin in water, then heat to dissolve.
- In the bowl of a stand mixer, using the paddle attachment, blend together the cream cheese, cocoa powder, sugar and vanilla extract.
- Turn off machine, pour the gelatin into the cream cheese mixture, quickly mixing until well combined.
- Working quickly at this point, by hand, fold into this the whipped cream and mini-marshmallows.
- Pour over the crust, and tap pan on a hard surface a couple of times to level, then refrigerate until set.
- For service, top with shaved semi-sweet chocolate and additional whipped cream. A nice drizzle of chocolate sauce is always good too.
