  • The tomatillo sauce:
  • 8 to 9 medium tomatillos, husked and rinsed
  • 1 jalapeno pepper, stemmed
  • 3 garlic cloves, unpeeled
  • 4 tsp olive oil, divided
  • 1/2 large white onion, cut into 1/4-inch dice
  • 1 1/2 cups chicken broth
  • The slaw:
  • 2 cups thinly sliced red cabbage
  • 1/4 cup chopped cilantro
  • 2 tsp fresh lime juice
  • 2 tsp honey
  • Pinch of kosher salt
  • 8 corn tortillas
  • The shrimp:
  • 24 large shrimp, peeled and deveined
  • 1/4 cup canola oil
  • 3/4 tsp ground coriander
  • 3/4 tsp ground cumin
  • 1 tsp chile powder
  • 1/2 tsp kosher salt
  • 3/4 cup crumbled cotija cheese (can substitute feta cheese)
