Ingredients

  • 7 ounce Roasted red peppers, liquid removed
  • 1 Tbsp. Extra virgin olive oil
  • 1/3 c. Minced onion
  • 1 1/2 tsp Garlic, minced
  • 1/2 tsp Tomato paste
  • 1/8 tsp Balsamic vinegar
  •     pn Cayenne pepper
  • 1 Tbsp. Lowfat sour cream

Directions

  1. Chop peppers and place in blender. Heat the oil in a small skillet over low heat. Add in onion and garlic to skillet and saute/fry till onion is translucent/soft, about 3 min. Scrape contents of skillet into blender. Add in tomato paste, vinegar, cayenne pepper and sugar. Blend till a smooth puree. Add in lowfat sour cream and blend till combined. Season puree to taste with salt and pepper.
