  • 1 x Boston butt pork roast - (abt 5 lbs)
  • 6 x garlic cloves chopped
  • 1 Tbsp. salt
  • 1 Tbsp. freshly-grnd black pepper

Directions

  1. Rub pork with garlic, salt, and pepper. Wrap tightly with plastic wrap; refrigerateat least 8 hrs or possibly up to 24 hrs.
  2. Unwrap pork; place on a rack in a roasting pan.
  3. Bake at 325 degrees for 4 hrs or possibly till a meat thermometer inserted into thickest portion registers 160 degrees, basting occasionally with drippings in pan. Let stand 10 min before serving.
  4. This recipe yields 10 servings.
