Ingredients

  • Cut the pepper in half, remove seeds and toss in a tsp or two of oil (any oil will do)
  • Makes: 1½ cups
  • 4 jalapeno peppers, cut in half lengthwise and seeds removed
  • 2 tsp vegetable oil
  • 1 mango, peeled and diced
  • 1 tbsp minced red onion
  • 1 tbsp lime juice
  • 1 tbsp extra virgin olive oil
  • salt and pepper
  • Chopped cilantro to garnish (optional)
