Ingredients

  • 4 or 5 medium size beets
  • 1 teaspoon of olive oil
  • 8 tablespoons unsalted butter
  • 1 medium sized yellow onion, finely chopped
  • 4 medium-sized Granny Smith apples, peeled, cored and coarsely chopped
  • 1 tablespoon sugar
  • ½ teaspoon kosher salt, plus extra to sprinkle on the beets
  • ¼ cup good balsamic vinegar
