This is a great, healthy snack that we had up in Park City this week. We all munched happily all week, and got so much more nutrition from it than we would have from most packaged snacks. Super easy to make and beautiful too!

Directions

  1. In a large bowl mix egg whites, honey, salt and spices.
  2. Add nuts, seeds and quinoa and stir to coat.
  3. Spread in a single layer on a baking sheet and bake at 325F until dry (about 30 minutes) stirring occasionally.
  4. Scrape them off the pan while they are cooling so they don't stick.
  5. Put in an attractive bowl and serve!

If anyone is interested in a raw version of this, you could replace the eggwhites with 2 Tground flaxseeds and 6 Tbsp water. Use quinoa that has been sprouted and put in a dehydrator instead of the oven. I may have to give it a try myself. Thanks for the inspiration.

You could grind it in a food processor, shape into bars and then put in dehydrator.
