I love this recipe! I am new at catering and am preparing Smoked pork chops for 130 people on thursday, any tips on preparation to make sure that they are not overdone? Any hints on a glaze or
sauce to garnish them? I was told by one cook the best way to prepare them was to bake them tightly covered and at aproximately 325 in a roaster or oven with a small amount of water for 30 minutes as they are already cooked
