Ingredients
- 1/2 x Bay leaf -- crushed
- 1 x Loin roast venison
- 1/2 tsp Celery seeds
- 1/2 lb Salt pork -- cut into
- Â Â Strips
- 1/2 tsp Dry thyme
- 1 sm Onion -- minced

- 10 ml Garlic -- chopped
- 4 whl cloves
- 1 Tbsp. Fresh parsley -- minced
- 1 tsp Beef bouillon
- Â Â Taste
Directions
- Fold 2 large sheets of aluminum foil together with a double fold. There should be sufficient to enclose the roast. Place roast on foil. Lard with pork strips. Stick cloves into loin and sprinkle other ingredients over top.
- Enclose roast tightly in foil and cook in 300 degree oven for approximately 45 min PER lb..
